Rice Crispy Ice-cream Sandwiches are an easy and fun summer treats kids can enjoy making themselves.
I guess it would be rude taking credit for this one. I had no intention getting crafty with what seems to be the main ingredients in my house hold. Apparently, reading the cereal box while eating breakfast can get one (8 y.o) inspired. Is these a better feeling than realizing you can make your own rice crispy treats?
So yes, this is a very short summary of how this recipe came about. I doubt it will drop any jaws. Nevertheless, it will impress the true CEOs in most homes of the western world: The kids. (And the other child AKA Daddy).
Having said that I will confess and add that this one is for the grown ups. I know, I know making these rice crispy ice cream sandwiches can be a fun activity with the kids. (yada, yada, yada) . But in my mind I kept seeing my friends faces when they realized what they have in store for dessert. You can relate, I’m sure!
Now Lets Talk About This Rice Crispy Ice-cream Sandwiches Recipe:
- You can use any rice crispy brand you wish and follow the rice crispy treats recipe on the box.
- Feel free to add sprinkles or coat the treats with melted chocolate.
- Use which ever cookie cutter shape you’re in the mood for.
- I softened the ice cream and spread it in a pan so I can cut some circles. Please note that you can avoid this step and just scoop the ice cream on the treat.

Rice Crispy Ice Cream Sandwich
Rice Crispy Ice-cream Sandwiches are an easy and fun summer treats kids can enjoy making themselves.
Ingredients
- 4 TBS Unsalted butter (55 g / 2 oz)
- 1 PKG Mini Marshmallows (180 g / 10 oz)
- 6 1/2 Cups Rice Crispy treats
- 1 tsp Vanilla extract
- Your choice of ice cream
Instructions

Place the mini marshmallows in a large bowl and slice the butter on top of it.

Mlet in the microwave, 30 seconds at a time stirring after each time untill melted and the butter has incoporated with the marshmallows.

Add the rice crispies and using a rubber spatula or a wooden spoon, stir untill all of the cereal has been coated with marshmallows.

Place the sticky cereal in the pan. With your hands, flatten it untill the pan is completely layered. Use a rolling pin to evenly spread. Set aside and allow to cool.

When cooled, use a round cookie cutter to cut circles.

Scoop ice cream and place it ontop of one rice crispy circle. Place another circle on top and gently press to even ice cream.
