Growing up, my mom baked sweet pastries almost every week. There was always a chocolate loaf, alongside a different surprise flavor, Back then, I though she was a magician. Now I know her secret: one reliable sweet yeasted dough and endless filling possibilities. The filling does not just determine the flavor, it also shapes the character of the pastry, from warm and cozy cinnamon rolls, to dessert like fruity treats.

What Makes This Recipe Different

The secret to this dough starts with melting the butter into the warm milk and sugar. The warm milk wakes up the yeast, and shortens both the proofing and mixing time, while the melted butter coats the flour and limit gluten development. The result is soft, tender, fluffy dough that makes for a pillow bakery-style sweet rolls.

Even if you never baked with yeast, this is an easy recipe you can master on the first try. And to help you bake with confidence, I included below my rules I always pay attention to even though I baked this recipe dozens of times.

  • Use a kitchen scale to measure the ingredients, too much will yield a dense dough and not enough means a sticky messy dough.
  • The milk mixture should not be over 110°F, or else the high temperature will kill the yeast. If you are not sure, dip your finger into the mixture, it should be nice and warm to the touch.

The yeast activity during rest time is a form of kneading, so avoid over mixing the dough. Stop mixing when there is no longer any dry flour visible and shortly after dough is formed.

  • Do not add more flour even if the dough is sticky. During rest time the flour will soak in the moisture and the dough will be soft and easy to work with.

Make Ahead And Baking

To make this dough the night before: reduce the yeast amount to 1 1/2 teaspoons, allow the dough to rest for 30-45 minutes at room temperature, then refrigerate it over night.

When baking rolls, bake them until they inner temperature reaches 180-200°F. Longer bake will yield for a drier rolls.

Easy Sweet Roll Dough With Yeast

Ingredients

  • 1 1/2 Cups (360ml) Milk
  • 6 Tablespoons (85g) Unsalted butter cut into 1/2-inch pieces
  • 1/3 Cup (70g) Sugar
  • 5 1/4 Cups (630g) Unbleached all-purpose flour
  • 2 1/4 teaspoons (10g) Instant yeast (or 1 Tablespoon active dry yeast)
  • 1 Large Egg at room temperature, beaten
  • 1 Large Egg yolk at room temperature, beaten
  • 1/2 teaspoon Salt

Instructions

  • Pour the milk (360ml) into a medium saucepan, then add the butter (85g) and sugar (70g)
  • Cook over medium heat, until the butter has melted. Remove from heat and pour the mixture into a bowl of a stand mixer and allow it to cool to 90-110°F.
  • Add to the mixing bowl two cups of flour (240g), the yeast (10g), the egg, egg yolk and salt (1/2 teaspoon). Use the dough hook to mix on low.
  • Increase mixer speed to medium then gradually add the rest of the flour (390g), 1/2 cup at a time. Do not wait between each addition of flour.
  • Increase mixing speed to medium-high and mix until you a hydrated, slightly sticky dough is formed.
  • Cover the bowl with plastic wrap, then set side to rise for 60-90 minutes, until double in size.
  • Use your hand to deflate the dough, transfer it to a clean working surface lightly dusted with flour. Roll and fill.
