Banana Brownie Swirl Cake

Delicous banana bread swilred with brownie

Ingredients

For the Brownie Batter

  • 5 TBS Unsalted Butter (70 g / 2.5 oz)
  • 1/4 Cup Unsalted Chocolate, coarsely chopped (30 g/ 1 oz)
  • 1/2 Cup Sugar (100 g / 3.5 oz_
  • 1 Large Egg, room temperature
  • 1 tsp Vanilla Extract
  • 4 TBS AP Flour (36 g / 1 1/4 oz)
  • 1/2 tsp Fine Sea Salt

For the Banana Batter

  • 1/2 Cup Unsalted butter, soften (113 g / 4 oz)
  • 1 Cup Sugar (200 g / 7 oz)
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 2 Medium Mashed overripe Bananas (230 g/ 8 oz)
  • 1/4 Cup Buttermilk 60 ml
  • 1 3/4 Cups AP Flour (210 g /7.5 oz)
  • 1 tsp Baking Powder
  • 1/4 tsp baking soda
  • 1/2 tsp Fine sea Salt

Topping

  • 1 Cup Semi sweet chocolate chips (170 g/ 6 oz)
  • 2 tsp vegetable shortning
  • 1/2 Cup Dried Banana Chips

Instructions

  • Preheat oven to 350F. Grease and line a 9"-5" loaf pan with butter and parchment paper.
  • In a medium bowl, warm the chocolate and butter on high for 1 minute. Stir until completely melted and smooth. Add the sugar vanilla and salt and stir. Stir in the egg then the flour and set a side to cool.
  • In a bowl of a standing mixer, on medium speed beat the butter and sugar together until light and fluffy, about 3 minutes.
  • Add the eggs, one at a time and scrape the sides of the bowl. Add the banana, vanilla and butter milk.
  • Turn the mixer off and sift the flour, baking powder, baking soda and salt on top of the banana batter and fold just until combine.
  • Spoon half the banana batter into the prepared pan and spread evenly with a spatula.
  • Pour the brownie batter on top of the banana batter and evenly spread.
  • Add the remaining of the banana batter on top of the brownie batter and smooth evenly.
  • Bake in the middle rack for 45-55 minutes or until a wooden skewer comes out clean from the center of the cake.
  • Remove the cake from the oven and wait about 10 minutes before removing from the pan.
  • Warm up the chocolate chips and shortening and stir until smooth.
  • When the cake is completely cooled, pour it over the cake and sprinkle with the dried banana chips.
