Jewish Apple Cake

Step One: Prepare The Apples

Peel, core and slice the apples to a 1/4 or 1/8-inch slices, and toss with cinnamon and sugar.  Allow them to sit while you make the batter.

Step Two: Make The Cake Batter

To make the batter, you can use a stand mixer, hand mixer or a large bowl and a whisk. 1. Whip the eggs with the sugar for about 1-2 minutes. 2. Drizzle in the vegetable oil. 3. Mix the flour and baking powder, then add it in three additions alternating with the orange juice and vanilla extract.

Step three: Assemble The Cake

Pour 1/3 of the cake batter into the can pan, and top with an even layer of apples. Repeat twice more.
