In a food processor, process toasted pistachios until liquid.
In a bowl, mix the dry ingredients and chopped pistachios
In a separate bowl, mix cream cheese, sugar and eggs
Mix in the pistachio oil
Add the dry ingredients, fill your muffin tins and bake
