Banana Brownie Swirl Cake

Delicous banana bread swilred with brownie

Ingredients

For the Brownie Batter

  • 5 TBS Unsalted Butter (70 g / 2.5 oz)
  • 1/4 Cup Unsalted Chocolate, coarsely chopped (30 g/ 1 oz)
  • 1/2 Cup Sugar (100 g / 3.5 oz_
  • 1 Large Egg, room temperature
  • 1 tsp Vanilla Extract
  • 4 TBS AP Flour (36 g / 1 1/4 oz)
  • 1/2 tsp Fine Sea Salt

For the Banana Batter

  • 1/2 Cup Unsalted butter, soften (113 g / 4 oz)
  • 1 Cup Sugar (200 g / 7 oz)
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 2 Medium Mashed overripe Bananas (230 g/ 8 oz)
  • 1/4 Cup Buttermilk 60 ml
  • 1 3/4 Cups AP Flour (210 g /7.5 oz)
  • 1 tsp Baking Powder
  • 1/4 tsp baking soda
  • 1/2 tsp Fine sea Salt

Topping

  • 1 Cup Semi sweet chocolate chips (170 g/ 6 oz)
  • 2 tsp vegetable shortning
  • 1/2 Cup Dried Banana Chips

Instructions

  1. Preheat oven to 350F. Grease and line a 9"-5" loaf pan with butter and parchment paper.

  2. In a medium bowl, warm the chocolate and butter on high for 1 minute. Stir until completely melted and smooth. Add the sugar vanilla and salt and stir. Stir in the egg then the flour and set a side to cool.

  3. In a bowl of a standing mixer, on medium speed beat the butter and sugar together until light and fluffy, about 3 minutes.

  4. Add the eggs, one at a time and scrape the sides of the bowl. Add the banana, vanilla and butter milk.

  5. Turn the mixer off and sift the flour, baking powder, baking soda and salt on top of the banana batter and fold just until combine.

  6. Spoon half the banana batter into the prepared pan and spread evenly with a spatula.

  7. Pour the brownie batter on top of the banana batter and evenly spread.

  8. Add the remaining of the banana batter on top of the brownie batter and smooth evenly.

  9. Bake in the middle rack for 45-55 minutes or until a wooden skewer comes out clean from the center of the cake.

  10. Remove the cake from the oven and wait about 10 minutes before removing from the pan.

  11. Warm up the chocolate chips and shortening and stir until smooth.

  12. When the cake is completely cooled, pour it over the cake and sprinkle with the dried banana chips.
