Snickers Bundt Cake

Ingredients

  • 1 1/2 Cup Whole Milk (360 ml / 12 oz)
  • 1 Cup Toasted peanut, coarse chopped
  • 3 Cups AP Flour (360 g /13 oz)
  • 1 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 3 Sticks Unsalted butter, softened (340 g / 12 oz)
  • 2 Cups Sugar (400 g / 14 oz)
  • 6 Large Eggs
  • 1 TBS Apple cider vinegar
  • 2 Cups Chopped 1/4" chopped snickers bars
  • 1/2 Cup Milk chocolate, melted (70 g / 2.5 oz)

Instructions

  1. In a medium-sized pan, pour the milk and add the chopped peanuts.

  2. On medium heat bring the milk/peanuts mixture to a simmer, reduce heat to low and let simmer for about 5 minutes.

  3. Increase heat to allow the mixture to come to a boil, then remove from heat and cool to room temperature. (or place in the refrigerator overnight).

  4. Once it reaches room temperature, pour the mixture over a sieve. Discard the peanuts.

  5. Preheat oven to 350F and grease a 9" bundt cake.

  6. In a medium bowl, sift the flour, baking powder, and baking soda. Set aside.

  7. Take a pinch the flour mix and sprinkle over the chopped snickers pieces, toss to incorporate.

  8. Measure 1 cup of the room temperature peanuts milk and mix in the apple cider vinegar.

  9. In a bowl of a standing mixer, place the butter and sugar and beat on medium for about 5 minutes, until light and fluffy. Scrape the sides and bottom of the bowl.

  10. Add the eggs, one at a time waiting for each egg to be fully incorporated before adding the next. Scrape the bottom and sides of the bowl.

  11. In 3 additions, add the flour mixture alternating with the milk starting and finishing with the flour mixture.

  12. Once you added the last portion of the flour mixture, turn the mixer off and using a rubber spatula fold the remaining of the flour and snickers pieces.

  13. Pour batter into the greased pan then drizzle the melted chocolate on top.

  14. Use a knife to swirl the chocolate into the batter.

  15. Baker for 55-65 minutes or until a toothpick comes out clean from the center of the cake.

  16. Remove from the oven and allow it to cool for 5-7 minutes then remove the cake from the pan.
