Traditional Honey Cake

Sweet, soft and tender with a hint of spice to give it an extra touch. This is a simple and traditional cake that is good for dessert, afternoon snack and even breakfast.

Ingredients

  • 3/4 Cups Light Brown Sugar (150 g/ 5.5 oz)
  • 2 Large Eggs, room temperature
  • 1 Cup Vegetable Oil
  • 1 2/3 Cup All Purpose Flour (200 g/ 7 oz)
  • 1/4 tsp Baking soda
  • 1 1/2 tsp Cinnamon Use 2 tsp if you desire
  • 1/2 Cup Apple Sauce, plain (100g/ 3.5 oz)
  • 1/3 Cup Honey (100 g/ 3.5 oz)
  • 1 tsp Vanilla extract

Instructions

  1. Preheat oven to 340F.  Grease 8.5" loaf pan (can also use two 7.75"), or 9" round pan.

  2. In a bowl sift the flour, b.soda, and cinnamon and set a side.

  3. In a large measuring cup mix the apple sauce, honey and vanilla extract. Set aside.

  4. In a bowl of a standing mixer, on the medium setting, whip the eggs and brown sugar until light brown. About 5 minutes.

  5. Reduce speed to low and slowly drizzle the oil into the eggs and sugar mix.

  6. Add the flour mix in 3 parts, alternating with the apple sauce mix starting and finishing with the flour.

  7. After adding the last part of the flour, turn the mixer off and use a rubber spatula to make sure all ingredients are combined.

  8. Pour batter into the pan and bake for 35-40 (less if using two small pans) minutes or until a tooth pick comes out clean from the middle of the cake.

Recipe Notes

The cake can be baked in a 9" round pan. Baking time should be 22-25 minutes.
