What is a Sponge cheesecake you ask?
Well, it's a sponge cake batter folded with cheesecake custard, giving us a light creamy and tender cake that tastes just like cheesecake!
Step 1 Make the cheesecake custard
Beat cream cheese, sugar and butter
Add eggs, cream and vanilla and lemon zest
Step 2 Make the sponge batter
Whisk sugar and eggs until doubled in size
Fold in the flour
Now, fold the cake batter with the cheesecake custard
Pour into a pan and bake
